Cook the sweet potato:
Preheat the oven to 200° (fan oven).
Wash and cut the sweet potato in half and place it cut-side down on a baking sheet covered with parchment paper.
Bake and cook for 45 min.
Check for doneness with the tip of a knife; it should sink in easily.
Meanwhile, prepare the stuffing:
In a pan, heat the olive oil and sauté the sliced onion.
Add the ground meat and cook for a few minutes, stirring regularly. Season with salt and pepper.
Add the tomato sauce and let it simmer for another 5 min.
Stuff the sweet potato:
Remove the flesh from the sweet potatoes without damaging the skin.
Mash it lightly with a fork and add it to the meat stuffing, along with half of the cheese and the oregano. Mix and adjust seasoning.
Fill the sweet potato skins with the mixture and sprinkle with the remaining grated cheddar.
Broil under the oven grill for a few minutes to brown.
Serve with a green salad.
