  • 2 cups custard, homemade or store-bought
  • 2 cups whipped cream
  • 2 cups mixed fresh fruit, such as strawberries, raspberries, or peaches
  • 2 to 3 tablespoons jam, optional
  • Flaked almonds or mint leaves, for garnish

  • 1 sponge cake or trifle sponge, cut into cubes

    Dissolve the jelly crystals in boiling water and allow them to cool slightly.

    Place the sponge cake cubes in the bottom of a trifle dish and spread with jam if using.

    Pour the cooled jelly over the cake layer and refrigerate until set.

    Spoon the custard over the set jelly layer and smooth the top.
