Wash the spinach. Put a little oil in a pan and cook them for a few minutes over medium heat, until they wilt. Let cool.
Toast the pine nuts in a pan for a few minutes until golden.
Squeeze the spinach in your hands to remove as much water as possible. Mix them with the cheese. Season, add the pine nuts, and mix well.
Preheat the oven to 200°C (395°F).
Unroll the puff pastry. Cut it into 8 pieces and place a spoonful of filling on each triangle.
Make 3 incisions and fold as shown in the picture. First, bring the tip down, then the 2 sides to form a rectangle. Cut off the excess, and mark with the tip of a fork.
Place on a baking sheet, brush with an egg yolk or a little milk. Bake for about 15/20 minutes.
