These vegetable patties, made with potatoes, carrots, and broccoli, cooked in an Air Fryer, are incredibly crispy on the outside and tender on the inside. A healthy and delicious option, perfect as a side dish or a tasty snack.
Coarsely grate the potatoes and carrots. Finely chop the broccoli or grate it as well. Place the grated vegetables in a clean kitchen towel and wring them very firmly to remove as much water as possible. This is a crucial step for crispy patties.
In a large bowl, mix the squeezed vegetables with the egg, flour, salt, black pepper, garlic powder, and onion powder. Mix well until all ingredients are perfectly combined.
Form patties about 1.5 cm thick and 7-8 cm in diameter with the mixture. Lightly spray both sides of each patty with olive oil spray.
Preheat your Air Fryer to 180°C (350°F) for 3-5 minutes. Arrange the patties in the Air Fryer basket in a single layer, without overlapping them. You will probably need to cook the patties in several batches.
Cook the patties for 10-12 minutes, then flip them and continue cooking for an additional 8-10 minutes, or until they are golden brown and crispy on both sides. Serve immediately with the sauce of your choice.
