This simple and speedy creamy orzo recipe uses fresh cherry tomatoes to create a flavourful base, and is topped off with crunchy roasted pine nuts, making it the perfect meal for busy days. Tomato orzo is one of our weeknight favourites!
Heat the oil in a sauté pan over high heat. Cook the tomatoes for 3 minutes.
Then add the water, orzo, bouillon, Italian seasoning, and pepper.
Cook at a gentle simmer for 10 minutes, until the orzo is al dente. Stir occasionally, and mash the tomatoes with the back of the spatula to extract their flavour and juices.
Then add the peas and basil. Cook for 1 - 2 more minutes.
Garnish and enjoy!
Storage Best to enjoy immediately, as orzo tends to dry out as it cools. Store leftovers in the fridge for up to 2 days.
